Dear Kay,

Today we give Carrington “Crock Pot” Fox a giant hug, because she has been luring us along on a low-’n’-slow cooking experiment that has taken us to many lands.

I am here to testify that I have made every single Slow Cooker Odyssey recipe, except for the newish Clafoutis. People keep eating the cherries before I can clafoutize them.

What strikes me about Carrington’s recipes is that they all follow the rule of Extreme Simplicity. You know that thing when you’ve got The Gourmet Slow Cooker out (a great cookbook, by the way), and it says something like “roll your stew meat pieces in flour before browning on all sides, then add to slow cooker”?

Flour? I haven’t owned flour since 1997.

Carrington’s concoctions are all a bit like stone soup, in that there’s a ton of room for improvisation and substitution. But I made the Cake as directed, and I ate, at rough estimate, 93 percent of the entire cake. It was delicious for dessert, and breakfast, and teatime, and bedtime.

Summer continues. Here’s hoping you have time to work your way through the Slow Cooker Odyssey, which will continue, never fear. I don’t think Carrington has even passed the Island of the Lotus Eaters at this point in her odyssey.

  • You haven’t owned flour since 1997?? But how do you create that white sauce that we learned to make in junior high school home ec class? You know, that sauce that was the basic for all those meals we were going to serve our future families in our suburban homes with 2.5 kids and 1 dog?

  • I recently bought some bison on sale (<— words you never expected to write) and put it in the freezer for an eventual oven casserole. But I haven't been cooking lately, because just barely below my conscious-thought level I'm expecting the world to combust at any moment and it would be irresponsible to Run Away Quick while leaving the oven on. This reminder of crockpotting is just what I needed – thanks!
